For the ETH Circle Annual Meeting 2025 at Innovationspark Zürich, Tastelab designed a space-inspired menu that transformed science and imagination into a multisensory dining experience.
Highlights included a galaxy-like cabbage foam that shifted color with citric acid, glowing carrot planets orbiting elderflower hollandaise and a trilogy of pea creations developed through centrifugation, separating peas into water, butter, and starch — each component reimagined into its own dish.
