Inspiration for Chalait
Chalet :: french, from latin cala "protected place". 
Lait :: french, milk. White, opaque emulsion of proteins, milk sugar and milk fat in water.

Chalait showcased modern alpine cuisine, focused on the vast potential of milk products. The two-month restaurant offered sharing dinners in a minimalistic, urban yet cozy atmosphere - from homemade kefir, fresh milk curds and whey caramel to a new version of the traditional Swiss fondue.
